This recipe calls for the following products in the Elevated Pantry:
INGREDIENTS NEEDED:
FOR SMOKEY COUSCOUS:
- 1 cup of CousCous
- 2 teaspoons of BLack to My Roots
- 1/2 teaspoon of Cumin
- 1/2 teaspoon of Coriander (optional)
- 1/4 cup of Olive Oil
- 1/8 cup of Coconut Aminos
- 1 tablespoon of Dripped Out Sun-Dried Tomatoes
- 1/2 cup of water
- pink himalayan salt to taste
- cracked black pepper to taste
- juice of 2 lemons
- 1 tablespoon of maple syrup
- a pinch of African Bird Pepper (OPTIONAL, FOR EXTRA SPICE 🌶)
FOR SALAD:
- 8-10 Pitted Kalamata or Black Olives, Sliced
- 1/2 Yellow Pepper, diced
- 1/2 cup of Dried Cranberries
- 1 cup of fresh Cilantro or Parsley, finely chopped
- 9-10 Cherry Tomatoes, Sliced in half
- 1/4 cup of purple onion, finely diced
DIRECTIONS:
Add all ingredients for Smokey CousCous in a large bowl. Mix thoroughly, cover the bowl, and let sit for 2-3 hours -- even better if overnight.
Then, mix all salad ingredients in with your prepared Smokey CousCous.

PRO TIP: DOUBLE THIS RECIPE and use it for meal prep. It gets better the more time it takes to marinate!
