RAW Vegan Smokey Moroccan CousCous Salad Recipe

This recipe calls for the following products in the Elevated Pantry:

INGREDIENTS NEEDED:

FOR SMOKEY COUSCOUS:

    • 1 cup of CousCous
    • 2 teaspoons of BLack to My Roots
    • 1/2 teaspoon of Cumin
    • 1/2 teaspoon of Coriander (optional)
    • 1/4 cup of Olive Oil 
    • 1/8 cup of Coconut Aminos
    • 1 tablespoon of Dripped Out Sun-Dried Tomatoes
    • 1/2 cup of water
    • pink himalayan salt to taste
    • cracked black pepper to taste 
    • juice of 2 lemons
    • 1 tablespoon of maple syrup
    • a pinch of African Bird Pepper (OPTIONAL, FOR EXTRA SPICE 🌶)

FOR SALAD:

    • 8-10 Pitted Kalamata or Black Olives, Sliced
    • 1/2 Yellow Pepper, diced
    • 1/2 cup of Dried Cranberries 
    • 1 cup of fresh Cilantro or Parsley, finely chopped 
    • 9-10 Cherry Tomatoes, Sliced in half
    • 1/4 cup of purple onion, finely diced 

DIRECTIONS:

Add all ingredients for Smokey CousCous in a large bowl. Mix thoroughly, cover the bowl, and let sit for 2-3 hours -- even better if overnight.

Then, mix all salad ingredients in with your prepared Smokey CousCous.

 **Feel free to add your other favorite veggies/salad ingredients to mix in. Get creative! Use this recipe as your foundation...

PRO TIP: DOUBLE THIS RECIPE and use it for meal prep. It gets better the more time it takes to marinate!
